Ingredients:
• 4 eggs
• 100g butter or coconut oil
• 200g ground almonds
• 100g ground hazelnuts
• 2 tbsp psyllium husk
• 400g seed mix (e.g. sesame, sunflower or pumpkin)
• 100g shredded zucchini
• 200g shredded carrot
• Pinch of sea salt
Directions:
1. Grate the vegetables (or pop them into a blender and chop them up reasonably finely)
2. Add the rest of the ingredients into the veggie mix and combine well
3. Put the mix into a greased loaf tin
4. Bake on 160 C for about 1 hour and 30 minutes
5. Cool until deliciously warm and enjoy with butter or your favourite savoury topping
Note
• Add any other favourite flavouring e.g. ½ cup of grated parmesan or goats fetta, sundried tomatoes, sliced olives, sauteed onion and/or bacon, herbs, chilli flakes etc. So good.
