Preheat oven to 180 degrees celsius or 350 degrees fahrenheit.
Cover sweet potato (& other vegetables if using), onion and garlic with melted coconut oil.
Place on a baking tray into the oven.
Bake for 25 – 30 minutes or until tender.
Meanwhile place all the other ingredients (except mayonnaise) into a bowl.
When the vegetables are cooked through, place them into a blender and blend on medium for 5 – 10 seconds or until the ingredients are well mixed yet vegetables are still a bit ‘chunky’.
Add the blended vegetable mix to the remaining ingredients in the bowl.
Mix together thoroughly.
When well mixed, take a spoonful of mix and form into patties and place onto a lined baking tray.
Place into the oven for 20 minutes or until lightly browned.
Enjoy for lunch, dinner or a snack and serve with a fresh, leafy green salad and home made mayonnaise, guacamole or steamed vegetables. Delicious!
