• 2 cups home made marshmallow roughly chopped into bite sized pieces
• 1 cup home made jubes
• 1 cup activated almonds roughly chopped (or macadamia nuts or we used pistachios at christmas time)
• 1 batch of home made chocolate
• 1/4 cup desicated coconut

Directions:

• Prepare the home made marshmallow.  It will take approximately 10 minutes plus about 4 hours to set.
• When you’re ready to make the rocky road, make the home made jubes then leave to set in the fridge until you need them.  They will take about 30 minutes to set.
• After placing them in the fridge make your home made chocolate.  It will take about 5 minutes to prepare.  Then when its ready place it in the fridge to leave to set / thicken slightly.  It’s ready when the consistency is similar to a thickened cream / sauce and will work to hold the rocky road ingredients together.
• Place all the ingredients into a bowl and gently mix together i.e. marshmallow, jubes, nuts, chocolate and desiccated coconut.
• Gently stir until all the ingredients are generously covered with the chocolate.
• Place baking paper on a shallow, medium sized baking dish and place the rocky road mixture onto it.  Smooth and shapen so the mix sticks together and there are few air pockets.  It will look like a giant slab of rocky road!
• Place in the fridge to set for approximately 2 hours.
• When it’s ready, cut into bite sized pieces and place in an air tight container ready to enjoy and share with loved ones!
