Preparation: 10 minutes
Cooking: 4 – 5 hours (depending on size of beef & oven temp).
Serves: 8 – 10 or 4 people with lots of leftovers!
Ingredients:
- 1.5 – 2.5 kg beef roast e.g. topside (see notes below)
- 1 onion roughly chopped
- 1 carrot thinly chopped
- 6 cloves of garlic chopped finely
- 1 Tbsp of paprika
- 1 Tbsp good quality salt
- 1 – 2 Tbsp ghee or olive oil
- 1/2 cup red wine (or 2 Tbsp red wine vinegar)
- 3 Tbsp tomato paste
- 1 cup tomato passata
- 1 cup beef stock or water
Directions;
- Turn oven on to 170 degrees celcius.
- In an oven proof pot heat the ghee or olive oil on medium heat on stove top.
- Add the beef and lightly brown on each side, remove & set aside.
- While the beef is browning, chop the onion, carrot and salt, then add to the pot & saute until just tender (about 3-4 minutes).
- Add garlic and paprika & continue sauteing for a minute until their aroma releases.
- Return the beef to the pot, adding the red wine or red wine vinegar. If using the red wine, allow to simmer & reduce for 1 – 2 minutes.
- Add the tomato paste, passatta and stock, mix well & carefully turn the beef, so covered with the liquid mix. The juices in the pot should cover about half the beef. If more fluid needed, add more stock or water to reach desired amount.
- Place in the oven to gently cook for approximately 4 – 5 hours or until the beef shreds easily or falls apart using a fork.
- After an hour turn the oven down to 150 degrees celcius and turn the beef and spoon the juices over the meat. Spoon juices over the meat every hour or so & check there’s enough fluid. If needed, add more water or stock. (After 4 – 5 hours, if the beef isn’t easy to pull apart, continue cooking for another hour or so).
- When cooked, pull the beef apart in the pot to soak up all the juices, alternatively pull out of the pot and pull apart in a dish or chopping board, serving juices separately.
- Serve your delicious pulled beef with mashed potatoes, cauliflower mash, rice, pasta, tortillas, tacos or whatever you like. Our favourite is mashed potato and steamed greens then tortillas with the leftovers! So good.
Notes;
In place of the beef roast I’ve also used osso bucco, brisket or beef ribs (trimming excess fat).
