Ingredients:
- 3/4 cup coconut flour
- 1/4 cup cacao powder
- 1/4 tsp sea salt
- 1 tsp baking soda
- 10 eggs
- 1 cup butter (or almond oil or use a mix of butter and coconut oil)
- 3/4 cup maple syrup or preferred sweetener (if using rapadura sugar, ¾ cup is enough)
- 1 tsp vanilla extract
Directions:
1. In a bowl, combine flour, cacao, salt and baking soda
2. In a large bowl, using an electric hand held blender, blend eggs, oil, sweetener and vanilla
3. Add dry ingredients into large bowl and continue to blend
4. Oil a 25cm cake tin with butter
5. Pour batter into the pan and bake at 180 degrees for 35-40 minutes
6. Remove from oven, allowing to cool completely then remove from the cake tin
7. Ice with your preferred icing or a chocolate ganache and serve
Chocolate Ganache
What:
- 100g dark chocolate (the higher % of cacao the better. I usually use 75%)
- 80 g cream
How:
- Melt the chocolate in a bowl over a saucepan or use a double broiler Once the chocolate is melted, stir in the cream
- Allow the chocolate to cool a little and finish off the cake
