Beetroot 'Hummus'

A purple, healthy twist on a traditional favourite.  The intense colour of this dip is a good enough reason alone to whip it up in an instant.  I love the beauty and vibrancy of beetroot, it just shouts out nourishing goodness.  They are true kitchen medicine.

Here’s a wonderful reminder why beetroots are a fabulous addition to our energetic day;

1. Lowers Blood Pressure.   Drinking beet juice may help to lower blood pressure in a matter of hours. One study found that drinking one glass of beet juice lowered systolic blood pressure by an average of 4-5 points.   Beetroot is great for our blood all round, (perhaps beetroots colour is natures way of hinting this to us)!

2. Boosts Stamina.  If you need a boost to make it through your next workout, beet juice may again prove valuable. Those who drank beet juice prior to exercise were able to exercise for up to 16 percent longer.

3. Fights Inflammation.

4. Anti-Cancer Properties.  The powerful phytonutrients that give beets their deep crimson color may help to ward off cancer.

5. Rich in Valuable Nutrients and Fiber.  Beetroot is high in immune-boosting vitamin C, fibre, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Beetroots also contain the B vitamin folate, which helps reduce the risk of birth defects.

6. Detoxification Support.  

Then, if you’ve bought the whole beetroot leaves and all.  Use the young beetroot leaves in salads or lightly steam to add these health promoting greens into your meal.

Beetroot ‘Hummus’
Ingredients:

  • 250g beetroot, trimmed and quartered
  • 1 cup raw cashews soaked for at least 2 hours & rinsed
  • 3 garlic cloves
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1 Tbsp cumin
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp celtic sea salt or himalayan salt

Directions:

  1. Place all the ingredients into a high speed blender and blend on high for approximately one minute.  Check intermittently to scrape down the sides of the blender.  Keep blending until a smooth consistency is reached.
  2. Taste for seasoning e.g. extra lemon juice or salt.
  3. Store in the fridge for up to 4 days.
  4. Enjoy with your favourite vegetables as a snack or as a side accompaniment to fish or lamb.

Notes

  • I’ve used raw beetroots, but you could just as easily use roasted or steamed beetroots for another element of flavour.
  • Other great accompaniments for beetroot are eggs and feta cheese.
