Chocolate Truffles

Have you been looking for a new healthy treat?  These chocolate truffles (or power balls) are a fantastic way to satisfy those after dinner sugar cravings as well as add some great nutrients and sustenance into our day!   Easy to pack for school lunches, picnics or if you need to rush out the door with something more wholesome.

The original recipe called for walnuts – when I first made them I didn’t have walnuts and used 1 full cup of home made desiccated coconut instead, (using the leftover pulp from my coconut milk recipe).  I was amazed out how soft and light they were, and thought they were far too good not to share.  As a bonus, as they’re nut free the kids could happily go off to school with them as a snack.

The recipe takes about 10 – 15 minutes and makes about 12 – 15 balls, depending how large they’re made

Chocolate Truffles
Ingredients:

  • 250g (1 cup) desiccated coconut
  • 1 heaped tbsp cacao powder
  • 2 tbsp chia seed ground
  • 1 tbsp mesquite powder (optional)
  • 1/4 tsp cinnamon
  • pinch sea salt
  • 1 tsp vanilla bean
  • 10 fresh pitted dates
  • 2 tbsp coconut oil

Ideas to decorate:

Desiccated coconut, goji berries, nuts, cacao.

Directions:

  • Blend all the ingredients together, except coconut oil.  Once all the ingredients are blended add the oil.  (When squeezed together, the mix should form into a soft ball).
  • Form into round balls, about the size of a small walnut
  • Roll the balls in your choice of garnish
  • Store in the fridge for up to 2 weeks.
