This is an easy snack to make ahead of time. It uses Kudzu to thicken the pudding. If you’re not familiar with Kudzu, it’s very health supportive – highly alkalising, is wonderful for the digestive system, nutrient rich and very calming. It can be found in whole food or health stores.
It’s generally quite lumpy. To easily measure the kudzu, place it in a small bowl and crush gently with a pestle or the end of a rolling pin, to a fine powder. This pudding becomes firmer as it cools and will last in the fridge for 3 or 4 days. In the cooler months I’ve sent it off with the kids in their lunch boxes for morning tea and also served it as a warming afternoon tea. Enjoy!
