Home Made Jubes (Squashies)

The kids LOVE these.  They look like lollies, taste like them…. only they’re HEALTHY.  So simple, Chloe my eldest, loves whipping them up in about 5 minutes flat.  Just allow time for them to set.  Enjoy!

Preparation time:  5 – 10 mins

Setting time:  30 mins approximately

Serves:  approx. 15 jubes

Home Made Jubes (Squashies)
Ingredients:

  • 1/3 cup of strained juice (freshly squeezed lemons or apple or pear ju
    ice, blueberries, beetroot, orange)
  • 1 – 3 tbsp sweetener of choice (maple syrup, brown rice syrup, coconut nectar)
  • 1 1/2 Tbsp of powdered gelatin, (grass fed)
  • optional:  for colour 1 tsp beetroot powder (or ¼ tsp turmeric powder if usi
    ng lemon juice as juice).

Directions:

  1. Place all ingredients into a saucepan.  Cook on low – medium heat, stir constantly until mixture is smooth and all lumps have disappeared (about 5 minutes).
  2. Place immediately into ice cube trays, or chocolate molds and place in the freezer for about fifteen minutes or the fridge for about an hour
  3. Once they’ve set remove them from the molds and place in a jar for storage in the fridge.

Notes:

  • They will keep for a few weeks at room temperature (if they last)!  Enjoy
  • for a special occasion or great to have on hand to substitute for lollies, little kids and big kids alike

Hi Kate I've been making these for a few months now, and they are quickly devoured within 2 days. I have started noticing that my mix becomes frothy when im stirring it. Any ideas why this happens?

I love hearing how much they're enjoyed Kiki! I know what you mean it's happened to me. I find it I stir too vigorously it creates the air bubbles. And then if you're not already, warm the liquid just a little, enough to help dissolve the gelatin more easily. (If it gets too hot that's okay it will just take jubes longer to set). Hope that helps. Let me know how you go. x

That's wonderful to hear, thanks for sharing Cherie. And they're an easy one for the kids to make themselves when they're older. (My guys make up a batch & have been selling them on the street)!
